Eggplant Recipes


Italian Eggplant Salad

Ingredients:

3 cups cubed eggplant
1 medium tomato, chopped

1 small onion, chopped
1 clove garlic, chopped
½ teaspoon oregano
¼ teaspoon black pepper

**Italian vinaigrette dressing from Good Seasons using only water and Lemon Juice in place of Vinegar and Oil packet
NO VINEGAR or OIL.....
In a saucepan bring 2 cups water to boil add eggplant, reheat to boiling.   Reduce heat, cover and simmer until tender, about 10 minutes, drain.  Place eggplant, tomato and onion in glass dish. Mix together with the garlic oregano and black pepper.
Pour as much of the Italian vinaigrette dressing.
Onto the eggplant as you would like, toss once more. Serve warm or cold.

Eggplant Spread

Ingredients:

1 large Eggplant
5 cloves roasted garlic
1 onion caramelized
1/4 tsp lite salt
1/4 tsp pepper or Mrs. Dash Original

Pre heat oven to 375 degrees.  Wash eggplant, dry cut in half and bake skin side up until fork tender. Let cool

Once cooled remove flesh from the eggplant and place in a food processor with all the other ingredients and pulse until smooth.

Slice up some green, red and yellow peppers
And use the eggplant spread as a dip!  YUM

Eggplant Parmesan

Ingredients:

One Eggplant
Mrs. Dash Italian Seasoning
Tomato

Pre-heat oven to 350 degrees

Peel and cut eggplant into ½ inch thick patties. Place patties on a Teflon non stick pan (this is your new best friend) season with Mrs. Dash Italian seasoning. Place in oven for 15 minutes. Slice Tomato and place slices on top of the eggplant continue baking for 5 to 10 minutes.
Serve and enjoy!

**To spice up this recipe you may add garlic or thinly sliced onions.  Also once you are allowed, top with ”Spicy, Hot V8 Juice” instead of the tomato.  Be sure to bake until the liquid has become a hardened paste on the eggplant.

Shish-Kebab

Ingredients:

Eggplant
Tomato
Onion
Apple
Mrs. Dash Seasonings

Cut the eggplant, tomato, onion, and apple into 1 inch chunks
Place on a skewer, season with Mrs. Dash.
Place on the barbeque grill. Turn every 5 minutes until all four edges have had a rest on the grill.

**You may never make a shish-kebab with chicken or beef again!

Afternoon Party

You’re not hungry but you really miss your chips and dip?  Here is the remedy.

Ingredients:

Eggplant –cut into ¼ inch thick      or less rounds
2 Avocados
2 Tomatoes diced (very small)
1 small onion diced (very small)
Pre-heat oven to 375 degrees
Place Eggplant rounds on a Teflon non stick cookie sheet and place in oven for 15 to 20 minutes –Watch them carefully.
In a separate bowl smash a couple of avocados, place diced tomatoes and diced onions in the same bowl and mix into a Guacamole dip, refrigerate.  Remove Eggplant chips from oven let cool.  Once cooled get the guacamole and the chips and enjoy for the afternoon!
