Garlic, Garlic and More Garlic
Ingredients:
2-3 heads of Garlic
Pre heat oven to 350 degrees
Cut the tops off the head of garlic. Wrap tightly in foil, place on a cookie sheet. Place in pre heated oven for 20 minutes, or until soft.
Once you have removed from oven let cool. The garlic cloves should come out very easily by squeezing the cloves from the bottom. Using a fork, mash the garlic cloves together while using the tongs as a press. Use in a dip or in a salad dressing.

Onion Soup
Ingredients:
2 lbs of sweet yellow onion sliced very thin
3 cloves of garlic minced
2-3 sprigs of fresh parsley
¼ tsp pepper to taste
Water or vegetable stock
Place all the ingredients into a stock pot, being sure to add enough water or vegetable stock to cover the onions. Let the soup simmer until the onions are tender. Serve hot!

Vegetable Stock (YUM)
Ingredients:
2 Heads Fennel
6-7 Carrots
1 Head of Celery
4-5 Medium Onions
2 Green Apples
2 Lemons
2 Oranges
10 Sprigs fresh Thyme
*Optional Ingredients
¼ cup white wine
3 Leek heads
1 Zucchini
1 Squash
Coarsely chop all ingredients. Fill a large stock pot with cold water, add ingredients. Bring to a boil, reduce heat and simmer approximately 45 minutes. Strain and Freeze.
