Acorn Squash
Ingredients:
1 Medium Acorn squash
2 small or large granny smith apple peeled and diced.
2 T diced celery
1 T Chopped onion
Pre heat 400 degrees
Cut squash in half remove seeds, bake skin side up on a cookie sheet until fork tender.
Place all the other ingredients in a casserole dish and bake for 45 minutes.
Place squash in a bowl skin side down- Scoop the ingredients from the casserole dish into the squash. Serve Hot.

Butternut Squash and Apple Soup
Ingredients:
1 Butternut Squash Seeded peeled and cut into cubes
3 Medium Green Apples peeled cored and chopped
1 Medium Onion chopped
Pepper, Rosemary, Marjoram to taste
1/4 tsp lite salt
Vegetable stock or water
Add all the ingredients into a stock pot adding enough liquid to cover. Bring to a boil, lower heat and simmer 45 minutes. Remove from heat and cool once cooled pour into a food processor and pulse 2-3 times. Pour back into stock pot heat through and serve.

Spaghetti Squash
Ingredients:
1 spaghetti squash
Pre heat oven to 350 degrees
Wash, dry and cut squash in half removing seeds
(Ice cream scoop or watermelon scoop works well)
Place on a non stick cookie sheet skin side up, Prick the skin with a fork here and there. Bake until fork tender 25-30 minutes. Remove from oven and let cool. Once cooled, take a fork and scrape the inside flesh, this will resemble spaghetti. Place in a bowl add enough of the Mock Marinara Sauce to coat. If you so choose, you may garnish with additional basil leaves.

Squash Baby Squash
Ingredients:
1 Acorn Squash
½ tsp cinnamon
Pre-heat oven to 350 degrees
Cut Acorn Squash in half remove seeds, place upside down on a cookie sheet. Bake 20 to 25 minutes sprinkle with cinnamon and enjoy!

Spaghetti Squash Delight
Ingredients:
1 spaghetti squash
2-3 medium size tomatoes
1 small onion thinly sliced
1 clove garlic chopped
½ tsp fresh basil
½ tsp fresh oregano
Pre-heat oven to 350 degrees.
Cut squash down the center remove seeds and place skin side down on a cookie sheet bake 20 minutes (or until tender).
Blanche the tomatoes remove the skins. Once skins are removed place tomatoes in a blender for a quick spin.
In a sauté pan sauté onion garlic basil and oregano when the onions are soft add tomatoes. Stir and keep warm.
Once Spaghetti Squash is removed from the oven, remove the center of the squash and mix with the tomato sauce!
