Tamato Recipes


Tomato Brochette

Ingredients:
2 large chopped tomatoes
2 cloves fresh garlic minced, or chopped
2 to 3 sprigs chopped fresh flat leaf parsley
Chopped fresh basil to your liking
1/3 cup chopped red onion
1/8 tsp lite salt (optional)

Chop and mix all in a bowl and enjoy

A few helpful hints to serve:

*In a parfait glass 
*On eggplant chips 
*How about a large iceberg lettuce leaf with a    dollop or two of the above rolled egg roll style!

Salsa

Ingredients:

2 tomatoes
½ cup onion
1 teaspoon garlic
½ cup fresh cilantro
2 tablespoons lemon or lime juice

 

Put everything in food processor or blender. Blend until mixed, but still chunky.

Roasted Tomatoes

Ingredients:

Roma Tomatoes
(As many as you would like this is the base for many upcoming recipes)

Pre heat oven to 375 degrees

Wash and dry tomatoes place on a cookie sheet.
Once oven is pre heated, place cookie sheet in the oven.  Bake approximately 20 minutes or until you see the tomato skin crack or semi open. The timing will depend on how large and how many tomatoes you have.  Remove from oven and let cool.  Once cooled, peel the skin off, core, place tomatoes in food processor or blender.  If you find the tomatoes have a very acidic taste add ½ tsp of honey.
This is a base recipe you will use over and over again.

Mock Marinara Sauce

Ingredients:

3-4 Cups Roasted tomato base
3 cloves garlic chopped
1 onion chopped
½ tsp lite salt or salt sense
Fresh basil leaves
Fresh oregano leaves

In a non stick pan sauté onions and garlic till translucent add tomato base, Italian seasoning lite salt, basil and oregano.  Let simmer for 20 minutes.

Tomato Basil Soup

Ingredients:

1 cup Mock Marinara Sauce
1/4 to 1/2 cup water or homemade vegetable stock if allowed
3 to 4 leaves fresh Basil
2 to 3 sprigs fresh parsley
Pinch of pepper or Mrs. Dash seasonings of your choice

Start by pouring Marinara sauce and water in a blender or food processor.  Zap for a quick mix,
Heat through and garnish with seasonings.

Gazpacho

Ingredients:

2 Cucumbers peeled seeded and      chopped
1 Green Pepper seeded and chopped
8 Vine ripened Tomatoes-or 2 large cans diced tomatoes (if allowed)
1 Sweet Onion diced
3 Cloves Garlic minced
1/4 tsp lite salt
3-4 leaves fresh basil chopped
Pinch of dry oregano
Pinch of cayenne pepper
1/2 tsp Paprika

Place all ingredients into a food processor and give a quick pulse (should be chunky).  Serve cold. Garnish with chopped cucumbers, chopped pepper, and chopped tomato.
